Mexican soup
1 1/2 onions
1 carrot cubed
Handful of green beans
4 tomatoes
Vegetable stock cube
1 clove of garlic
1 chilli
Chopped coriander
Lemon juice
1tbsp tomato purée
Mexican spices
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp chilli
1/2 tsp cayenne pepper
1/2 tsp oregano
1/2 tsp Harissa
Really the onion and garlic should be fried in a bit of oil first but as I’m trying to keep the calories down I’m just going for the bung everything in a pan method
