IN A JAM!

As Aldi have been selling pineapples for 69p I have been full advantage of this & have a mountain of them lol. So I decided to make pineapple jam with them, it is sooooo easy and 1 pineapple made nearly 5 jars not to mention the fact it’s dead yummy too.

All you need is 1 pineapple, 1 cup of water, 2 cups of sugar and a couple of limes. Basically you just chop the pineapple as chunky or as fine as you like (I like loads of chunky bits in mine as it will break down to mush if its too fine). All you need to do is cook the pineapple with the water for 30 mins and then add the juice of 2 limes and the sugar and cook for a further 60 mins until it thickens. I should probably add this needs to be on a low to medium flame or you will get pineapple toffee, which is also yum but will not spread on your toast and will be a nightmare to get off your pan! Considering what pineapple toffo’s used to taste like this might be a job for another day ;D

Voila! Pineapple jam & it lasts for 3 months if you put it in a sealable jar.
